Sour Cream Apple Squares


I'm always looking for apple recipes and this is one of my favorite desserts using apples. I made this cake yesterday. It should probably be cut into squares smaller than a piece of cake. I call it a cake but it's more of a bar cookie. The bottom layer adds a delicious crunch to this cinnamony moist apple dessert. Serve it as is, dust with confectioner's sugar, or add a dollop of whipped cream or whipped topping.

Sour Cream Apple Squares
2 cups all-purpose flour
2 cups packed brown sugar
1/2 cup butter or margarine, softened
1 cup chopped walnuts or pecans
2 teaspoons Watkins Cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (8 ounces) sour cream
1 teaspoon Watkins Vanilla Extract
1 egg, beaten
2 cups chopped peeled apples
Confectioners' sugar
Whipped cream or topping (optional)

In a mixing bowl, combine flour, brown sugar, and butter; blend at low speed until crumbly. Stir in the nuts. Press about 2 3/4 cups into the bottom of an ungreased 13-inch x 9-inch x 2-inch baking pan.

To the remaining crumb mixture, add cinnamon, baking soda, salt, sour cream, vanilla, and egg. Beat until thoroughly combined. Stir in apples.

Spoon evenly over bottom layer. Bake at 350 degrees F for 35-40 minutes or until cake tests done. Cool on a wire rack. Dust with confectioners' sugar. Cut into squares. Garnish with whipped cream if desired. Yields 12-15 servings.

Peppermint Patties
Make some mints for your family for Valentine's Day and attach a homemade Valentine that says "We were MINT for each other."

2 cups powdered sugar
1 1/2 tablespoons softened butter
2 teaspoons Watkins Peppermint Extract
1/4 teaspoon Watkins Vanilla Extract
2 tablespons cream
8 ounces (about 1 1/3 cup) dark chocolate, chopped
1 tablespoon vegetable shortening

Line a cookie sheet with wax paper. In a blender, cream together the sugar, butter, extracts, and cream on low speed. After the ingredients are combined, raise the speed to medium-high and beat for an additional 1-2 minutes until mixture holds together very well and is creamy, not powdery.

Using a teaspoon, roll the candy into small balls and flatten them on the wax paper or silpat with the palm of you hand into patty shapes. When done, put them in the refrigerator to chill for 20 minutes.

Meanwhile, melt the chopped chocolate and the shortening in the microwave or over a double boiler.

Using dipping tools or two dinner forks, dip the patties into the chocolate one by one. Drag them across the lip of the bowl to remove any excess chocolate. Return them to the wax paper or silpat, and place back in the refrigerator to set the candies. They should be ready to eat in a few hours.

Due to the dairy ingredient, these need to be kept in the refrigerator. Layer the patties between sheets of parchment in an airtight container. They'll keep for a month.

What Natural, Organic, and Green Mean to Watkins

Green - a shorthand phrase referring to sustaining Earth's resources. It is a vague term that can be used in many different contexts.

Ecological footprint - the amount of water and food needed to meet your daily needs throughout your lifetime.

Try this: plug your televisions and other home theater electronics in a power strip with an on/off switch. When you turn your television and other electronics off for the night, flip the switch on the power strip and totally eliminate wasted power.
  • Save over 50% on your homes lighting cost when you replace a standard incandescent bulb with a compact fluorescent bulb. They last longer too!
  • Always wash clothes in cold water. Not only does this preserve the color longer, it saves you money and conserves energy.
  • Use your consumer power! Support companies that are making an effort to improve communities and the environment through Greener manufacturing practices, charitable support, and product offerings that are safe for your family and the environment.

Almond Bar Cookies

I made these cookies over the weekend and we've eaten them all. If you like baked goods flavored with almond, you'll love these bar cookies. Bake them at the lower temperature and they turn out chewy; bake them at the higher temperature and they are crunchy and crispy.
They are perfect with a cup of coffee or tea.

In an effort to cut out some of the calories I didn't drizzle them with the Almond Icing; I just sprinkled them with sliced almonds before baking.

Almond Bar Cookies

1/2 cup butter
1 cup sugar
1 egg
1/2 teaspoon Watkins Almond Extract
1 3/4 cups all-purpose flour
2 teaspoons Watkins Baking Powder
1/4 teaspoon salt
1/2 cup sliced almonds
2 tablespoons milk
1 cup confectioners' sugar
1/4 teaspoon Watkins Almond Extract
1/4 cup milk

Preheat oven to 325-350 degrees F. In a medium bowl, cream butter and sugar. Add egg and 1/2 teaspoon almond extract; mix until fluffy. Stir in flour, baking powder and salt; mix well. Divide dough into 4 pieces, and roll each one into a log about 12 inches long. Place 2 logs per cookie sheet 4 to 5 inches apart. Flatten each roll by hand until it is about 3 inches wide. Brush flattened roll with milk and sprinkle with sliced almonds.

Bake in preheated oven 12 top 15 minutes or until edges are slightly browned. While the cookies are still warm, cut them crosswise at a diagonal, into slices about 1 inch wide.

When cool, drizzle with almond icing.

Almond Icing

In a small bowl, stir together powdered sugar, almond extract, and milk until smooth. Drizzle over the cookies. Makes 4 dozen cookies.
