If you've turned on the radio or television lately, you've probably heard the term Green more than once. Seems that these days everyone is going Green and reducing their carbon footprint. But what do these terms really mean? They are buzzwords that we are going to continue hearing a lot about, so let's find out what all the BUZZ is about!

Green is a shorthand phrase referring to sustaining Earth's resources. It is a vague term that can be used in many different contexts. But footprints are a bit of a different story.   • Turn off televisions, stereos, home theater systems, and other electronics when not in use. Try this: plug your televisions and other home theater electronics in a power strip with an on/off switch. When you turn your television and other electronics off for the night, flip the switch on the power strip and totally eliminate wasted power.
  • Save over 50% on your homes lighting cost when you replace a standard incandescent bulb with a compact fluorescent bulb. They last longer too!
  • Always wash clothes in cold water. Not only does this preserve the color longer, it saves you money and conserves energy.
  • Use your consumer power! History of Watkins Products

Watkins was founded in 1868 by J.R. Watkins. That’s 140 years ago. In 1868, the Civil War had just ended and was a recent memory to everyone at the time. Andrew Johnson was President of the United States taking over from Abraham Lincoln who was recently assassinated. A few things that did not exist yet include the telephone, the light bulb, airplanes, and the Suez and Panama Canals. There were just 37 states in the union and they were all in the same time zone since there was only one time zone. General George Custer and Geronimo were still alive and well. And J.R. Watkins, living in Plainview, Minnesota had a dream, a recipe, and a kitchen where he created Watkins Red Liniment.

His Watkins Red Liniment launched a company that has created careers for hundreds of thousands of Watkins men and women over the years. In 1869, J.R. Watkins established America’s first Money-Back Guarantee. He put a Trial-Mark on the Liniment Bottles and told customers that they could use the product down to that line and if they didn’t like it, he’d give them their money back.

By 1885 the production of Liniment had outgrown his home and the town of Plainview, so he moved the company to the booming lumber town of Winona, Minnesota, which boasted five railroads and was already an important port on the Mississippi River. In Winona, Watkins incorporated his company as the J. R. Watkins Medical Company. The company expanded its product line to include products such as Petro-Carbo Salve, Vanilla, Black Pepper, and Cinnamon. By 1915 Watkins was the largest direct selling company in the world and had the majority of the spice and extract market for decades.

For 140 years, Watkins has been America’s pioneer in natural living, utilizing the finest natural ingredients in our product line from apothecary to spices. Million Dollar Peanut Butter Cookie Recipe


Carolyn Gurtz of Maryland recently won Pillsbury's annual million dollar prize for baking with her innovative peanut butter cookie recipe.This wonderful recipe that Carolyn calls her Double-Delight Peanut Butter Cookies, is described by Carolyn as "crunchy and sweet on the outside, creamy on the inside."

How does a peanut butter cookie become creamy on the inside while staying crunchy on the outside? Carolyn had a wonderful idea of wrapping Pillsbury's cookie dough around a ball of creamy peanut butter mixed with powdered sugar. The cookie is rolled in a mixture of granulated sugar, Watkins Cinnamon and chopped dry roasted peanuts before baking.

I recommend that you use Watkins Pure Ground Cinnamon with the sugar and peanuts when making the coating for the cookies. Watkins Pure Ground Cinnamon contains no foreign matter or fillers and has a minimum of 2% natural essential oil that gives it a wonderfully sweet flavor.

Million Dollar Peanut Butter Cookies

1/4 cup Fisher Dry Roasted peanuts, finely chopped
1/4 cup Domino or C&H Granulated Sugar
1/2 teaspoon Watkins Pure Ground Cinnamon
1/2 cup JIF Creamy Peanut Butter
1/2 cup Domino or C&H Confectioners Powdered Sugar
1 roll (16.5 oz) Pillsbury Create 'n Bake refrigerated peanut butter cookies, well chilled

1. Heat oven to 375 degrees F. In small bowl, mix chopped peanuts, granulated sugar and cinnamon; set aside.
2. In another small bowl, stir peanut butter and powdered sugar until completely blended. Shape mixture into 24 (1-inch) balls.
3. Cut roll of cookie dough into 12 slices. Cut each slice in half crosswise to make 24 pieces; flatten slightly. Shape 1 cookie dough piece around 1 peanut butter ball, covering completely. repeat with remaining dough and balls.
4. Roll each covered ball of cookie cough in peanut mixture; gently pat mixture completely onto balls. On ungreased large cookie sheets, place balls 2 inches apart. Spray bottom of drinking glass with Watkins Cooking spray; press into remaining peanut butter mixture. Flatten each ball to 1/2 inch thickness with bottom of glass. Sprinkle any remaining peanut mixture evenly on tops of cookies; gently press into dough.
5. Bake 7 to 12 minutes or until edges are golden brown.

I couldn't find Pillsbury Create 'n Bake refrigerated peanut butter cookie dough at my grocery store so I used homemade peanut butter cookie dough and the cookies tasted yummy!

Herbed Turkey



Herbed Turkey

• 1 (12 lb) whole turkey
• 1/4 cup Watkins Original Grapeseed Oil
• 2 tbsp Watkins Garlic Powder
• 2 tsp Watkins Basil
• 1 tsp Watkins Sage
• 1 tsp salt
• 1/2 tsp Watkins Black Pepper

Preheat oven to 375° F. Clean turkey (discard giblets or cook for gravy) and place in a roasting pan.

In a small bowl, combine oil, garlic powder, basil, sage, salt and pepper. Using a basting brush, apply the mixture to turkey.

Bake for 2 to 2 ½ hours, or until the internal temperature of the thickest part of the thigh measures 160º F.

Remove bird from oven, and allow to stand for about 30 minutes, internal temperature will rise.

They might look similar to any old can of soup, but these are NOT the same as typical condensed soup that makes one or two servings. These are dry mixes, that make up to 50 servings or more. • The Mushroom Soup Base is a huge time saver for making homemade spaghetti sauce. Instead of cooking my sauce of hours I know add a few tablespoons of Mushroom Soup Base. It thickens my sauce and adds a lovely light mushroom flavour that even my picky step-daughter can deal with.

• My single most favorite product is the onion soup. I like being able to fix a cup of good soup instantly. My favorite soup is a pack of ramen noodles (throw away their seasonings), some pepperoni (turkey is best, less fat) and two teaspoons of the onion soup. It's delicious and ready in a couple of minutes.

• I take a bag of frozen green beans or green peas and I mix in 1 Tbsp of butter/margarine, 1/2 tsp of cinnamon, 1 Tbsp splenda (or sugar if you prefer), a couple shakes of Garlic Liquid Spice, 2 Tbsp of water and 2 Tbsp of the Six Onion Soup base, then microwave for about 5 minutes, and sprinkle with Minced Green Onion right before serving.

• We have a customer whose step-dad recently had part of his tongue amputated due to cancer. Due to the chemo, his taste buds are about shot. My customer said that she needs more Beef Soup base, that she is almost out. You see, the only thing that the family found that dad will eat is our Watkins Beef Soup Base, because, it is the only thing that he can taste and he LOVES the flavor.

• I just returned from a Good Tastings party and I made a Six Onion Cheese Ball, What a hit! Everyone loved it. I have also tried the Six Onion Mashed Potatoes and are those yummy! (find recipes on www.WatkinsOnline.com/eleisiawhitney).

1 package (8 oz.) cream cheese, softened
1 jar (7 oz.) marshmallow cream
1 tsp. Watkins Ginger
2 tsp. Watkins Rum Extract
1/8 tsp. Watkins Orange Extract (optional)
Dash Watkins Nutmeg

Combine all ingredients and beat until smooth. Place in serving bowl and sprinkle a small amount of nutmeg on top for garnish.

Serve with assorted pieces of fresh fruit placed on cocktail picks.

4 chicken breasts, boneless skinless

Watkins Cooked Playdough
2 cups/500 mL all-purpose flour
1 cup/250 mL salt
2 Tbsp/30 mL Watkins Cream of Tartar
2 ½ cups/625 mL water
¼ tsp/1.2 mL Watkins Food Coloring
2 Tbsp/30 mL cooking oil
Watkins Extracts of choice: Anise, Peppermint, Almond, Strawberry, Orange, Banana, Coconut

Combine dry ingredients in a saucepan. Add water and oil. Heat stirring constantly until the
dough comes away from the side of the pan and forms a ball. Cool. Divide in half and knead in
food coloring and 1 tsp/5 mL extract of choice until smooth. Store in a plastic bag or container in
the refrigerator. Keeps for months! Makes 4 cups.

Pumpkin Butter Cupcakes

2 1/4 cups/560 ml all-purpose flour
1 tbsp/15 ml Watkins Baking Powder
1/2 tsp/2.5 ml baking soda
1/2 tsp/2.5 ml salt
1/2 tsp/2.5 ml Watkins Cinnamon
1/2 tsp/2.5 ml Watkins Ginger
1/2 tsp/2.5 ml Watkins Nutmeg
1/2 cup/125 ml butter, softened
1 1/3 cups/325 ml sugar
2 eggs
1 cup/250 ml Watkins Pumpkin Butter
3/4 cup/180 ml milk
3/4 cup/180 ml chopped walnuts

In medium bowl stir together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg. In large bowl cream together butter and sugar until light and fluffy; beat in eggs. Blend in pumpkin butter. Stir in dry ingredients and milk, blending until batter is smooth. Stir in chopped walnuts. Spoon batter into paper lined muffin tins. Fill about 2/3 full. Bake at 375 degrees F/190 degrees C for 18 to 22 minutes. Makes 16 cupcakes.

Brown Sugar Frosting

1/4 cup/60 ml butter
6 tbsp/90 ml brown sugar
6 tbsp/90 ml half-and-half
2 cups/500 ml powdered sugar
1 tsp/5 ml Watkins Vanilla

In 2 quart/ 2 liter saucepan melt butter over mediumj heat. Add brow sugar and ahal-and-half. Continue cooking, strirring occasionally, until mixture comes to a boil (2 to 3 minutes). Let cool to spreading consistemcy (5 to 10 minutes). Frost cupcakes.

From 1901 to 1918 and 1934 to 1948 Watkins published an Almanac and Home Book filled with valuable information for all Watkins customers. Times have changed but Watkins still loves to share helpful tips that are safe for your home and the environment!

In the personal care segment many companies are applying "natural" to their product labels. Without a governing agency to set natural standards for personal care, any brand on the market can call itself natural, regardless of its ingredients. Definitely deceiving to consumers!

Without set standards it is easy to see why consumers are confused! With Watkins you can trust our entire line of 95% and above natural personal care products are natural. But just how do you decipher the truly natural products from impostors? Watkins Natural Personal Care Product Manager Andrea Buckner sat down with me to explain and offer a few helpful tips.

What makes a personal care product natural?

The ingredients in a product determines if a product is truly natural or not. At Watkins, we believe that in order to call a product natural, the product as a whole needs to be formulated using natural ingredients. In an ideal world, all of our products would be 100% natural, and that is something we are striving for; however, there are circumstances when a natural substitution is not available. We take into consideration the origin of ingredients, as well as the processes that it may under take to be a useable ingredient in personal care products. Just because a product contains one or two natural ingredients, doesn't mean it's truly a natural product.

What are the clues we should be looking for on the label that tell us the product is not truly natural?

Because the market is not regulated, being label savvy is really important when it comes to natural personal care products. If you see parabens (Methyl-, Propyl-, Ethyl-, Butyl-), petrochemicals (petrolatum, mineral oil, paraffin), chemical sunscreens (Oxybenzone/Avobenzone),or phthalates, you can be sure the product is not natural. Also, be apprehensive when you see a personal care product that says all-natural, made with natural, contains natural. . . .etc. Check the ingredients!

What if a product contains a natural ingredient? Is it natural?

Definitely not! There are companies out there who do this exact thing. Their lotion contains natural lavender oil, so they call it a natural lavender lotion. This is very deceiving to the consumer, but because natural personal care is not regulated, companies get away with stuff like this. This is why we put our natural percentage bar on each product that we have. We are honest with the consumer.

But it says "natural" or "organic" on the label.

Correct, and legally the companies can call it what they want. Recently, however the Natural Products Association (NPA) has stepped forward with a set of guidelines that have defined what 'natural' means. At Watkins, we are in the process of having all of our natural personal care products certified by the NPA, which will allow us to put a seal on each product. This seal ensures the consumer that the products they are purchasing are truly natural. It also helps to separate those who are not natural companies. What ingredients should we steer clear of?

As mentioned above, there are a handful of ingredients that natural products steer clear of. At Watkins, we have developed what we call our Freedom Code. We adhere to this code in the development and formulation of J.R. Watkins Natural Apothecary.

Sweet Potato Bread


Sweet Potato Bread

1 1/2 cups all-purpose flour
2 teaspoons Watkins Baking Powder
1/4 teaspoon salt
1/4 teaspoon Watkins Nutmeg
1/2 teaspoon Watkins Cinnamon
1 teaspoon fresh orange peel or 1/2 teaspoon Watkins Orange Peel
1/2 cup granulated sugar
1/2 cup brown sugar
1 cup chopped walnuts
2 large eggs, lightly beaten
1/2 cup applesauce
1/4 cup butter (optional-leave out for low fat)
4 tablespoons milk
1 1/2 cup cooked and mashed sweet potatoes

Grease bottom of two loaf pans. Stir together flour, baking powder, salt and spices in mixing bowl: stir in the sugar, and walnuts. In separate bowl, combine eggs, applesauce, milk, (butter if adding) and mashed sweet potatoes, stir to blend well. Add wet mixture to the dry ingredients and mix with a large spoon just until the mixture is moistened. Pour batter into prepared pans. Bake at 325 for about 1 hour 10 minutes (check with toothpick insected in middle comes out clean.)

Orange Cream Spread
Blend 1 tablespoon of orange juice and 1 teaspoon grated peel (or 1/2 teaspoon Watkins Orange Peel) into 3 ounces of cream cheese. Spread over top of Sweet Potato loaf or on slices of bread.

This Sweet Potato Bread is low in fat, easy to make and delicious.

Crab and Onion Cups


Crab and Onion Cups

1/2 cup/125 mL (1 stick) butter, softened
2 tbsp/30 mL Watkins Onion Soup Base
1/2 tsp/2.5 mL Watkins Lemon Pepper
1 1/3 cups/325 mL all-purpose flour
2 cups/500 mL (8 oz/227 g) shredded sharp cheddar cheese, room temperature

Blend butter, soup base and lemon pepper thoroughly. Stir in flour and cheese, knead until well-mixed. On a floured surface, roll out dough use a round cookie cutter and cut rounds. Spray muffin tin with Watkins Cooking Spray and place cut rounds in a muffin tin and press to create cups. Bake for 8 — 10 minutes in a preheated 350ºF/180ºC oven.

Filling
1 package (8 oz/227 g) cream cheese, softened
3 tbsp/45 mL Watkins Crab Snack & Dip Seasoning Mix
2 tsp/10 mL Watkins Organic Garlic Powder
1/2 cup/2.5 mL finely chopped bacon, prepared
1/2 cup/2.5 mL Watkins Minced Green Onion
8 oz/227 g imitation crabmeat, chopped

Combine cream cheese, snack & dip mix, and garlic powder. Add bacon, onion and crabmeat. Fill cooled onion cups with crab mixture.

Labeling supplement bottles presents a challenge to manufacturers: a great deal of information about a complex product must be squeezed into a tiny space. Through necessity, abbreviations and verbal shorthand are used, and their meaning can be lost on the consumer. Use this handy guide to understanding vitamin labels.

% of Daily Value: The "Daily Value," or DV, shows the percentage one serving supplies of a total DV. If the value is more than 100 percent, it suggests that the vitamin formulator sees an advantage to exceeding the DV.

Serving Size: This indicates how many of the units - tablets, soft-gels, capsules, etc. - need to be consumed in a day to reach the percent of daily value listed on the label.

Units of measure. These reflect the standard reference units for each kind of nutrient. "I.U.," stands for "International Unit" and is the standard for measuring fat-soluble vitamins, which include vitamins A, D, E and K.
Double asterisks: If these are in place of DV listings, it usually means that DVs have not been established for these nutrients.

Other ingredients (or inactive ingredients): This is a list of compounds that do not directly contribute to the nutrient DVs in the supplement, but instead aid in functions such as tablet integrity, proper digestion or preservation of shelf life.

Note: Serves to warn consumers of potential adverse effects the supplement could present to some individuals (such as women who are pregnant or lactating, people taking certain prescription medications, or those with allergies to specific ingredients) as well as storage information.


Here’s a guide to understanding supplement labels. The print is a little small so compare it to one of your vitamin bottles.






1. "% of Daily Value": The "Daily Value," or DV, was created by the U.S. Food and Drug Administration for labels on foods and supplements, and implemented in 1994. It is based on two sets of references: Daily Reference Values, or DRVs, and Reference Daily Intakes, or RDIs. DRVs are for nutrients for which no set of standards existed previously, such as fat and cholesterol. RDIs replaced the term "U.S. Recommended Daily Allowances" (RDA), which were introduced in 1973 for labeling of vitamins, minerals and protein.
If the "% Daily Value" listed is "75%" that means one serving supplies 75 percent of the entire DV for that nutrient. If the value listed is more than 100 percent, it suggests some advantage to exceeding the DV. In this case, it reflects the view of Dr. Weil and his science advisory board that the DV established by the FDA is below the optimal dosage. This illustrates the difference between "what you can get by on" and "what is the amount that may provide the most benefit."

2. "Serving Size": This indicates how many of the units - tablets, soft-gels, capsules, etc. - need to be consumed in a day to reach the percent of daily value listed on the label.

3. The nutrients are included in some Weil dietary supplements because studies suggest they have scientifically validated health benefits and are safe to consume at the amounts contained in the supplement.

5."Other ingredients": This is a list of compounds that do not directly contribute to the nutrient DVs in the supplement, but instead aid in functions such as tablet integrity, proper digestion or preservation of shelf life.

6. "EXP" indicates the expiration date; that is, the date by which the supplements in the bottle will have degraded to the point that the percent of DV listed on the label is no longer accurate. Consuming supplements that are past their expiration date is usually not harmful, but since the full nutritional value is not received by the consumer, it is recommended that supplements that have passed their expiration date be replaced with fresher ones.

7. "LOT" is a number that identifies the specific manufacturing lot that included this particular item. It is useful in the unlikely event that questions arise about the integrity of ingredients or manufacturing processes used to create that lot.

8. "Directions" provides information to help the consumer safely obtain maximum value from the product.

9. "Note" serves to warn consumers of potential adverse effects the supplement could present to individuals such as pregnant or lactating women, people taking certain prescription medications, or people with allergies. This section also contains information regarding how to store the supplements.

10. Manufacturer's information tells which company made the supplement, and where the company has its headquarters.

11. "For more information" provides contact information should purchasers or potential purchasers have questions about the product.
