Pumpkin Puree, Pumpkin Muffins, Pumpkin Pie Spice

Did you grow pumpkins in your garden or pick up some pie pumpkins at the pumpkin patch or super market? How about making some fresh pumpkin puree for your favorite holiday pumpkin recipes?

Homemade Pumpkin Puree Recipe

Select ripe and firm small or medium pumpkins. (Bigger pumpkins can have a grainy texture)

Cut open the pumpkin and remove the seeds and fibrous strings.

Cut the pumpkin into four to eight pieces.

Line a large baking pan aluminum foil.

Place the pumpkin pieces, rind side up, onto the baking pan.

Bake in the oven at 375 degrees F for one to 1 1/2 hours, or until pulp is soft.

Scoop the soft pulp from the rind with a spoon. Discard the rind.

Use a potato masher, blender, or food processor to mash the pulp into a smooth texture.

You need to eliminate as much water content as possible. Place the puree into a cheesecloth and drain. Squeeze out excess water.

Now you are ready to bake those delicious desserts! Make a yummy pumpkin pie or these pumpkin muffins!

I just baked these Pumpkin Muffins and they are some of the best muffins I've ever tasted, especially warm from the oven! The cinnamon sugar topping blends with the pumpkin for flavorful moist muffins.

Pumpkin Muffins

From Gourmet November 2006

1 1/2 cups all-purpose flour
1 tsp baking powder
1 cup canned solid-pack pumpkin (from a 15-oz can) or use 1 cup of fresh pumpkin puree
1/3 cup vegetable oil
2 large eggs
1 tsp Watkins Pumpkin Pie Spice
1 1/4 cups plus 1 Tbsp sugar
1/2 tsp baking soda
1/2 tsp salt
1 tsp Watkins Cinnamon
1/2 cup chopped walnuts

Equipment: 12 foil or paper muffin liners; a muffin pan with 12 (1/2-cup) muffin cups
If you don't have paper muffin liners, lightly butter the muffin pan cups.

Preheat oven to 350 degrees F. Put liners in muffin cups.

Whisk together flour and baking powder in a small bowl.

Whisk together pumpkin, oil, eggs, pumpkin-pie spice, 1 1/4 cups sugar, baking soda, and salt in a large bowl until smooth, then whisk in flour mixture until just combined. Add chopped nuts and mix.

Stir together cinnamon and remaining 1 tablespoon sugar in another bowl.

Divide batter among muffin cups (each should be about 3/4 full), then spinkle tops with cinnamon-sugar mixture. Bake until puffed and golden brown and a wooden pick or skewer inserted into center of a muffin comes out clean, 25 to 30 minutes.

Cool in pan on a rack 5 minutes, then transfer muffins from pan to rack and cool to warm or room temperature. Enjoy!

Cinnamon Power

Watkins Cinnamon (01115)
With Watkins Cinnamon you can be sure you are getting the best:

Flavor — Watkins Cinnamon contains a minimum of 2% essential oils, other brands contain 1% and some as low as .5%.

Quality — Each shipment Watkins receives is put through a battery of tests to ensure it is only the highest quality.

Particle size — Watkins Cinnamon is carefully ground and sifted to ensure uniform particle size and quality.

On the market — Watkins purchases only the best Cassia Cinnamon available. Our strict attention to detail makes our cinnamon the very best on the market.

Cinnamon Facts

Popular spice — Cinnamon is the world's oldest and most popular spice, know as the most important "sweet spice."

Two types — There are two types of cinnamon; Cassia and Ceylon. Cassia has a more intense flavor than Ceylon and is what we in North America call "cinnamon." Ceylon has a milder flavor, most Ceylon cinnamon imported to the United States is actually re-exported to Mexico.

Fun fact — If you stacked every tin of cinnamon Watkins has sold since 1895, it would be 12,411 times taller than the Empire State Building!

Make sure your customers' pantries are stocked with Watkins Cinnamon, the holiday baking season is right around the corner!

Cinnamon - it's not just for dessert!
Enjoy this simple recipe for an added kick of flavor at any meal. Cinnamon-Scented Grilled Chicken is perfect on salads, pasta and seasoned rice.

Cinnamon-Scented Grilled Chicken Breast

2-1/2 to 3 tbsp/40 to 45 mL fresh lemon juice
1/2 tsp/2.5 mL Watkins Garlic Flakes
1/2 tsp/2.5 mL Watkins Curry Powder
1/4 tsp/1.2 mL Watkins Cinnamon
1/8 tsp/0.6 mL Watkins Black Pepper
Freshly ground Watkins Sea Salt to taste
4 skinless, boneless chicken breast halves

Directions
Combine lemon juice with all ingredients except chicken; mix well. Add chicken and turn to coat all sides. Allow to marinate at room temperature for 15 minutes. Grill or broil chicken 5 minutes per side, or until cooked through. Makes 4 servings.

Cinnamon Power
Cinnamon has fantastic health benefits; you may find you'll want to sprinkle Watkins Cinnamon on just about everything you eat!

The Agricultural Research Service at the U.S. Department of Agriculture found that cinnamon made the body's cells more responsive to insulin, which in turn, helps to control the level of sugar or glucose in the blood.
In studies, blood sugar levels started rising as soon as cinnamon was stopped, emphasizing the importance of daily consumption.
New research shows that ground cinnamon may also reduce the bad LDL-cholesterol, total cholesterol and triglycerides in type 2 diabetics.
1/4 tsp of cinnamon every day may help to lower blood sugar, fats and cholesterol by up to 30 percent!

Deodorant and Breast Cancer

Something to think about! Read and judge for yourself. I just ran across this article on ThirdAge, a Health and Wellness Site.

Before you read the article I want to mention that Watkins Aloe and Green Tea Deodorant does not contain aluminum. It uses natural coriander and sage extracts to help tighten pores and eliminate body odor without the irritation and drying of antiperspirant products. Pure aloe vera gel and antioxidant green tea extract keeps skin soft and healthy. More detailed product information here: http://www.watkinsonline.com/pdf/products/AGTDeodorantUS.pdf

New research suggests that the aluminium in many anti-perspirants has a potential link with breast cancer. Here, a leading breast cancer specialist explains why he suggests avoiding the products.

Women who have had breast cancer should consider not using antiperspirants or deodorants. And healthy women should think twice about it, especially those with a strong history family history or other risk factors.

This might sound surprising, as we know fruit and vegetables can help keep cancer at bay. But the irony is that women who are particularly diligent about eating enough fruit and vegetables then cover their armpits every day with chemicals that mimic estrogen, the cancer-promoting hormone.

Though a direct link with cancer has not been established, my view on deodorants is based on the available evidence and informed common sense.

A recent study at Keele University found that the aluminium salts used to block the pores so you don't perspire can get into breast tissue.

Worryingly, these salts are more concentrated in the areas of the breast where cancer is more likely to develop ... on the side and towards the armpit.

This study follows on from one done two years ago at the University of Reading, which showed aluminium salts can behave like estrogen in the body.

This study also found that the preservative parabens used in these products have also been found in breast cancers.

Another part of the jigsaw came from a U.S. researcher, who has found that the more often women use anti-perspirants or deodorants (which make you smell nice without blocking the sweating) and shave their armpits, the earlier cancer is likely to appear.

What all this suggests is that using these products may make breast cancer more likely.

I'm very much aware there is no clear proof anti-perspirants or deodorants cause cancer, but with one in nine women developing the disease, it seems sensible to be cautious and not take unnecessary risks.

Of course, industry commentators such as the Cosmetic, Toiletry and Perfumery Association dismiss this latest research and claim there is no evidence for a link between breast cancer and anti-perspirants.

But I say: Why take the risk? We are surrounded by carcinogens and we can handle a certain amount, so the sensible thing is not to add to your exposure unnecessarily.

The point about deodorants is that once you get into the habit, you are going to use them every day for years, which means you build up a lot of exposure to a potential carcinogen.

Watkins Strives for Less Harmful Impact On You and Your Environment

As the world population grows we put more polutants into the air damaging the ozone layer that protects us from harmful untraviolet radiation. Our planet is filling up with junk, trash, and garbage.

In an effort to cut down on the rising piles of landfills most cities arrange to have recyclable trash and items picked up for reuse. Our waste management company picks up newspapers, cardboard, magazines, envelopes, phone books, mixed paper, junk mail, paper bags, milk and juice cartons and boxes, paperboard boxes and egg cartons, aluminum cans, containers, and foil, steel and tin cans, glass bottles and jars, and plastic bottles, containers, and jugs with recycling symbol 1-5 and 7 on the bottom.

Many recyclables can be donated to school groups, youth groups, and charities for them to exchange for money. Most supermarkets have bins for customers to recycle plastic bags. Charities pick up used cars, clothing, household items, appliances, and furniture.

I am proud that Watkins uses recyclable plastic, glass, paper, or metal packaging for most products. Shipping materials are cardboard boxes and the packing peanuts are made of corn starch which can be reused or disintegrate in water.

The new Natural Cleaning Products feature non-toxic plant-based formulas that are both biodegradable and phosphate free. These ultra concentrated cleaners are naturally derived so they are easy on the environment, your home and your loved ones. The concentrated formulas use compact packaging that means less waste and less impact on the environment.

Tips for New Home Business Owners

You’ve decided to start a home-based business. If you weren’t born with that inventive gene inspiring you to start a new company with exciting new products that everyone needs, then you most likely will choose an established company. Your first venture as an entrepreneur should invigorate and enlighten you. Let those creative juices flow but don’t try to reinvent the wheel.

1. Do some research before jumping in with both feet. Look at the startup costs, commission structure and compensation plan, company support, and longevity of each company. Are there both online and offline selling opportunities? Does the company allow you to advertise online and offline using the company’s name? Can you create your own web site for search engine optimization?

2. Choose a company with quality products that you can believe in and that you and your family will use. Your enthusiasm and knowledge won't show if you don't enjoy using the products yourself.

3. Start with a basic business plan with specific goals. Write down
your business plan, goals, and the "why" for your business. Your “why” should be very specific and motivating.

4. Budget your time and money. Even though you are working at home treat your business like a business. Schedule your time planning, organizing, and communicating with customers and prospects. Your products won’t sell themselves. If they did the company wouldn’t need you! Once your business is up and running set aside a certain percentage each month to build your business. Never spend money on advertising that you can't afford to lose if your response is low.

5. Get a notebook and keep accurate records of your income and
expenses. A home business gives you tax benefits not available to
other business owners. Always keep a written record or backup disc of your business income, expenses, and customer and prospect files; computer problems can destroy your business information.

6. Develop a record keeping system for customers, prospects, and business associates; one that expands as your business grows. Use software like Quick Books or create your own.

7. Involve your family. They will be more supportive of the time you
spend on your business if they know what you are doing or are
actively involved.

8. Tell everyone you know and don't know about your products and
home business and ask for referrals. Hours of planning and organizing won't do you any good if you don't consistently tell people about your business. Communicate with five or more people a day.

9. Give yourself a fair chance to succeed. Everyone you talk to won’t be interested in your products or business, but your determination and perseverance will pay off. A “no” only means you are one step closer to a “yes.” Consistently work your business for a least a year before making a decision to proceed or look for a new product and home business.

If you want to have a successful home business, treat it as a business and not as a hobby. After choosing a company to represent, develop a written plan with a specific “why” to motivate you. Budget your time and money; don’t spend more money than you can afford. Keep detailed written records. Involve your family for support. Let them share your successes and help you through the rough times. Don’t spend all your time planning and organizing. Promote your business every day. Don’t prejudge. Everyone is a potential customer or associate. Don’t give up when you hit a rough spot. Have fun and enjoy yourself. Remember why you chose this business.

Pain Relief Burn Cream

Pain Relief Burn Cream

I must tell you why every home should have a jar of Watkins Pain Relief Burn Cream. I spilled boiling water on my hand while cooking dinner a few weeks ago. Ouch! To say the least! I immediately put my hand under cool running water. Then I slathered Watkins Burn Cream all over the burned area. After 20 to 30 minutes the burning pain stopped. The burn cream has lidocaine and aloe gel to help relieve the pain and itching from minor burns, sunburn, windburn, insect bites and other minor skin irritations. I kept my hand covered with burn cream all evening. The next day there was only a little redness on my fingers and no pain. No blistering was visible. During the healing process a little of the skin peeled on two of my fingers but otherwise there was no damage to my skin. I truly believe that every home should have a jar in their kitchen or medicine chest.

July is National Ice Cream Month

July is National Ice Cream Month so take your family out to the ice cream parlor for a cool summer treat or make your own homemade ice cream!

When I was growing up we always made homemade ice cream during the summer especially on the Fourth of July or when we had a family gathering. We had a wood hand crank type ice cream maker. After putting the sweet cream mixture in the central metal canister and adding the paddle and lid, we placed crushed ice and ice cream salt around the canister in the wood bucket. Then my Dad would turn the handle which mixed the cream and rotated the metal canister until the ice cream froze. At first the handle turned easily but as the mixture chilled and thickened it became more difficult to turn. Of course, all the kids had to take a turn at turning the crank; that was part of the fun of making homemade ice cream.

After a while the handle wouldn't turn any more because the ice cream was frozen. Then my Dad would pack the freezer with ice and cover it with a burlap bag to keep it cold. We always made vanilla ice cream and then topped it with fresh strawberries or peaches or hot fudge.

Today the self freeze machines make it easy and quick to make homemade ice cream anytime of the year. We use an electric plastic bucket ice cream maker and an automatic freezer bowl ice cream maker.

The electric plastic bucket ice cream maker is similar to the wood hand crank maker except there is no hand crank. The cream mixture goes in the metal canister and then crushed ice and ice cream salt are layered and packed into the plastic bucket. Then you plug in the ice cream maker and the canister turns automatically and stops when the ice cream is frozen, approximately half an hour.

The automatic freezer bowl ice cream maker requires no ice or salt to make ice cream. You place the bowl in the freezer about 24 hours before you plan to make ice cream or if you have room in your freezer keep the bowl there so you can make ice cream whenever your heart desires. The bowl contains a cooling liquid between a double insulated wall that freezes. Mix up your ice cream mixture and chill several hours. Place the frozen bowl on the base, put the mixing arm in the freezer bowl, add the lid, and turn on the switch so that the bowl begins to turn. Then pour the chilled ingredients through the spout on the top of the ice cream maker. You can see the ice cream as it spins and freezes, 20 to 30 minutes. You can make ice cream, frozen yogurt, and sorbet with this ice cream maker.

Scoop and eat the soft creamy ice cream right from the maker or freeze for a firmer more solid ice cream. Homemade vanilla ice cream makes yummy root beer floats.

Some ice creams are made with custards, that is, liquid cooked with an egg yolk-sugar mixture. Adding egg yolks enhances the smooth texture of a custard; cooking the egg yolks makes them ultra-safe. But many recipes don't require eggs.

We used to make ice cream using fresh eggs as ingredients but today using fresh uncooked eggs is not recommended because they might not be safe to eat raw.

Vanilla ice cream is still the most popular flavor. Other favorites are chocolate, strawberry, cookies 'n' cream, butter pecan, peach, and coconut.

Our Wood Bucket Hand Crank Ice Cream Maker looked similar to this but was not electric and had a crank type handle. It also looked more rustic.

Strawberry Ice Cream

1/2 C. almonds or pecans

In a large saucepan, combine cocoa and sugar. Whisk in milk gradually. Stir over low heat until sugar and cocoa are dissolved. Cool to room temperature.

Add vanilla, salt and heavy cream to cooled mixture.

Grate chocolate. Stir chocolate, marshmallows and nuts into cocoa mixture.

Pour into ice cream maker. Freeze according to manufacturer's directions. Stir well after freezing to make sure that nuts and marshmallows are evenly distributed.

Tips

  • Put your ice cream canister in the freezer 24 hours before you plan to make ice cream.

  • Have the ice cream mixture as cold as possible when you put it in the canister. If it is not cold enough, the water in the milk separates and ice crystals form.

  • Make your ice cream base the day before. The colder it is when you get ready to freeze it the better.

  • Add your favorite cookies, nuts, fruit, or flavorings.

  • The first ice cream parlor opened in America in 1776 in New York City.

  • Dolly Madison served ice cream at the second inaugural ball in 1812.

  • The ice cream cone was patented in 1903 by Italo Marchiony. He was a ice cream vendor on Wall Street and didn't have enough dishes to keep up with demand, so he teamed up with a waffle vendor.

What is Organic?

Do you know what organic means, and how it applies to you?

In the most basic sense, organic means grown or raised naturally. For crops, this means that no chemicals (e.g., pesticides), sewage sludge, radiation, or genetic engineering are used on the product. For organic animal products like eggs, dairy, and meat, there is an additional aspect: the chickens and cows are not given antibiotics or growth hormones.

In addition to the above, organic tends to indicate that the product is grown or raised with Mother Nature's health in mind, and thus usually includes sustainable practices that will maintain or even improve the quality of the soil such as composting, crop rotation, and choosing plants which are suited to the region.

Organic animals are nearly always raised (and, in the case of organic meat, slaughtered) humanely: organic chickens are cage-free, organic cattle are free-range, and the animals are usually vegetarian.

Organic products are better for humans, animals, and the Earth. They don't contribute to pollution, they promote humane treatment, and they contain only what nature meant for them to have - no chemical residues or growth hormones.

The downside is that organic products cost more because they are considerably more labor-intensive. Organic farmers cannot use low-cost shortcuts like pesticides and herbicides; they expend extra effort and time to get rid of pests and weeds naturally (for example, by using natural predators and weeding manually).Traditional crops are cheaper at the check-out stand, but they do not take into account environmental costs.

One other thing to know about organic is that it doesn't apply only to food. Non-edible products like organic cotton and medicinal herbs are also available.

Organic certification is very strict. Independent companies such as QAI have been providing the strictest organic certification for more than a decade, and the USDA created its own certification standards and label in 2002.

Top 5 Ways to Spice Up Your Health

Spices. Was have been fought over them. Great explorers have sailed in pursuit of them. And gifting history was made by three wise men bearing them. Turns out that the ancients were on to something. Research is now showing that five spices we've long savored just for their flavor are also nutritional powerhouses. Toss these overachievers into your salad or sauce and get a whopping dose of disease-preventing antioxidants along with a flavorful punch.

1. Cinnamon
This natural germ-fighter also helps lower blood sugar, triglyceride, and cholesterol levels - ¼ teaspoon a day is a healthy goal. Sprinkle a little of the powder on freshly ground coffee beans when making your morning java.

2. Thyme
It makes it into grilled poultry, fish, and meat marinades by virtue of its minty, lemony flavor; it makes it onto the RealAge list of healthy herbs by virtue of its anti-cancer potency. It's also long been used as an antiseptic. Yep, that could be thyme oil in your mouthwash. If you've got a fresh bunch, mince some into your vinaigrette. Yum.

3. Cumin
Concealed in your humble chili powder is one of the world's most popular spices (it's a key ingredient in Indian curries too) and another anti-cancer soldier. Go exotic and add cumin to rice and grain salads and marinades, or try this heart-healthy Ultimate Beef Chili made with chunks of fat-trimmed meat.

4. Oregano
Thank our GIs for bringing oregano home from Italy after WWII. A food world superpower, leaves of the herb boast 42 times more antioxidants than apples. Wow. Use oregano to add a delicate flavor to salad dressings, garlic bread, and omelets, as well as your favorite pastas.

5. Turmeric
Called the "Queen of the Kitchen" by Indian cooks, turmeric (and its active ingredient, curcumin) has earned its crown. Studies show promise in fighting cystic fibrosis, colon cancer, arthritis, and even Alzheimer's. For an earthy flavor and yellow coloring, add a pinch of turmeric to rice, stew, or lentils. Hey, it might even help you remember where you left your keys last night.

Watkins History

Watkins was founded in 1868. That’s 139 years ago. In 1868, the Civil War had just ended and was a recent memory to everyone at the time. Andrew Johnson was President of the United States taking over from Abraham Lincoln who was recently assassinated. A few things that did not exist yet include the telephone, the light bulb, airplanes, and the Suez and Panama Canals. There were just 37 states in the union and they were all in the same time zone since there was only one time zone. General George Custer and Geronimo were still alive and well. And J.R. Watkins was living in Plainview, Minnesota and had a dream, a recipe, and a kitchen where he created Watkins Red Liniment.

His Watkins Red Liniment launched a company that has created careers for hundreds of thousands of Watkins men and women over the years. In 1869, J.R. Watkins established America’s first Money-Back Guarantee. He put a Trial-Mark on the Liniment Bottles and told customers that they could use the product down to that line and if they didn’t like it, he’d give them their money back. By 1915 Watkins was the largest direct selling company in the world and had the majority of the spice and extract market for decades.

Do you remember how wonderful your Grandmother’s cooking was? And your Great Grandmother’s cooking also? The traditional home-cooked meal by our ancestors were almost always cooked with Watkins Products, almost exclusively. That, and a pinch of love is what made those old-time traditional home-cooked meals so delicious and wonderful! Our Watkins products are what almost everyone used up until the 1950’s. When people think fondly back at all those wonderful meals, Grandma’s wonderful cookies, cakes and pies, Great Aunt Mabel’s amazing roast, they are thinking fondly of how wonderful Watkins products are!

So spread the word and don’t forget how special Watkins Products really are. Why do you think so many great people are involved with Watkins? Not just the wonderful income opportunity and the great products - but also the great family values and traditions that are synonymous with Watkins.
